My new client loves loves loves the copy I sent him, and I am thrilled! So, I am taking this afternoon off to get some little errands done. Library books (overdue) need returning, cat food needs buying, and I gotta take the bus up to Costco and buy some total crap.My sister is engaged to a fantastic man - father of 2 amazing kids I am ecstatic to call my niece/nephew...I am sooo in love with them - and his parents are throwing a big engagement party this Saturday. They live in a rural area, lots of open space and water, outdoor hot tub (!!!), so they are having a pig roast. How over the moon am I? TOTALLY. I can't imagine a better way to spend an evening than hot tubbing, drinking too much wine, and hacking off and eating chunks of spit-roasted pig. Somebody call Dionysus, we's havin' a par-tay.
I have to bring dessert for 60+ guests. That's my job. As much as I would like to bring healthy, low-carb fare, it just aint possible. I don't have much money to spend on this. So I am hitting Costco for some garbagey stuff, like enormous cookies and brownie bites and whatnot. I won't be eating any of it. Even if I wanted to, I can't bc it's all wheat. I may bring a tray of fruit as well, in case I want something sweet, but with an entire PIG to eat from, who cares??? Have your cake. I'll take another slice of butt, please.
Other than spending the next few days baking my shrinking/firmed-up ass off, there really aren't a lot of options for premade lowcarb desserts. Not when you're feeding a whole whack of people, anyway. And gluten-free? Fugghedaboudit, unless my landlord doesn't mind me being late with the rent next month.If anyone has some brilliant ideas, I'd love to hear them! How can you keep dessert lowcarb when feeding a big honkin' group? Other than, like, meat tarts or something.

I have a son and husband who like dessert a lot, so I still make it on occasion. Currently, I am baking clafoutis with homegrown peaches and/or fresh figs. I haven't worked out a carb count, but I got great readings on my glucose meter, so I think it is low enough.
I used a basic clafoutis recipe (sort of like shallow dish fruit cobbler, but with a eggier batter instead of a biscuity one), substituted Splenda for the sugar (& cut that a bit, too, because I think most desserts are too sweet), and substituted quinoa flour (gluten-free) for the 1/3 cup all purpose flour. I have seen some LC versions that use almond meal/flour for part of the all purpose flour. Then I topped it with fresh whipped cream (iSi Cream Whippers rock!). It was a huge hit with the family. Super easy to make, too.
I also make low carb cheeksecakes (Dana Carpender has some great recipes in her more recent LC cookbooks), baked custard, dark chocolate mouse, dark chocolate pot de creme.
Mixed fruit salad (berries, stone fruits, and other lower sugar fruits are better than high sugar tropical fruits) blended with whipped cream is good if you can keep it chilled. Or top the fruit with a LC custard.
The major down side that I can see is the need to keep cream and egg based desserts chilled.
Costco has some frozen profiteroles that aren't too bad in the carb department, IF the qty is kept low, the chocolate sauce is omitted, and they are eaten after a LC meal (rather than on an empty stomach).
How about melon and other lower sugar fruits and cheese assortment? Costco has some great specialty cheeses now, in a separate case from the ordinary cheese. How elegant! A dish of individual dark chocolates bars? Costco also sells a large bag of Hershey's Dark Special bars (not my favorite brand, but it is at Costco) that aren't too high in carbs if not overeaten.
Just some thoughts.
Mmmm... meat tarts. They're so meaty, and yet so tarty.
How about mini low-carb-cheesecakes in a pecan crust?
I use the foily cups o happiness (they keep their shape) and place a small bit of the pecan crust miz in the bottom of each foil. Then add the cheesecake topping, bake, and serve with sliced, fresh straberries or drizzled, high-octane dark chocolate.

Desserts? Whipped cream with cocoa, stevia and any flavor DaVinci syrup, it's like mousse, only better! :D
