Romaine lettuce. That's right...romaine lettuce. No, I didn't invent this. Dedicated low carbers have discovered pretty much everything already, and for that I thank them. I just clued in to this today, for some reason, even though I'd wrapped other stuff in lettuce.
You're not limited to hot dogs here. Pretty much anything you'd stick between bread - egg salad, sausages, bacon and tomato - you can roll up in a big leaf of romaine.
I've got one foot-long organic hot dog (from Beretta Farms...sooooo good) cut in two, with mustard and my beloved Bubbies sauerkraut (if you can't make your own, get Bubbies). I am no good at folding, tucking or rolling stuff, so this was a tad messy what with kraut juice running amok down my arms. I'm sure you're more coordinated and sensible and patient and will do better.
Incidentally, you can make another low carb, gluten-free wrap out of egg whites. Mix with a little water to thin, then cook them like a crepe. If you're an anally retentive clean freak, you may want to skip this option. Not the tidiest.
See? Gluten-free doesn't have to mean starchy rice flour or crumbly corn meal. There are plenty of naturally grain-free options out there. You just have to think outside the (fattening, overpriced and usually not so tasty) gluten-free box.
What else do you wrap stuff in? Tell me so I can post about it later and take credit for it.

I never used romaine to wrap hot dogs--even in my Crap Food days I ate them sans roll anyway so I don't miss them.
One thing I can advise is to stay away from those foul La Tortilla Factory things (if they're even sold in Canada; if they're not consider yourself fortunate). They smell like garlic-flavored cat vomit and taste worse. And I have ten cats, so I know my cat vomit!
Warning duly noted!
I've got three, sometimes a fourth...I know my cat barf too ;)
Ten cats? WOW.
Ten cats is still much more cost-efficient than one kid. Also you don't have to worry about paying for college, weddings, or bail bonds.
I can't argue with that!
I don't get into the lettuce wrap thing, but I admire the hell out of you for it. ;-)
Speaking of crepes as wraps, I have a good recipe for that here:
http://thedivinelowcarb.blogspot.com/2007/05/p-flax-crepe-wraps-v11-caraway-rye.html
1.85ecc and 10.05 protein per crepe
-- but it has gluten. I put it here for your readers who might not have to avoid that.
I'm hoping to come up with a flax seed meal variant.
PS I have eight cats! Oh wait. Nine, counting the new kitten!
What do I wrap things in?
Bacon. Even crispier than lettuce.
